ABSTRACTThe purpose of this study was to determine the right concentration pineapple juice addition carrot hard candy. Knowing chemical characteristic candy added with juice. Evaluating panelist preference for This used a completely randomized design (RAL) method consisting 5 treatments and 3 replications juice: (10%), (15%), (20%), (25%), (30%). Then analysis carried out water content, ash content reducing sugar organoleptic test. The results is value has an average 1.47% - 3.10%, 0,0120% 0,0204% 11.42% 13.63%. Carrot 30% most preferred by panelist.Keywords: candy; juice; ABSTRAKTujuan dari penelitian ini adalah menentukan konsentrasi penambahan sari buah nanas yang tepat terhadap permen keras wortel, mengetahui sifat kimia wortel dan nanas, mengevaluasi tingkat kesukaan panelis nanas. Penelitian menggunakan metode Rancangan Acak Lengkap terdiri perlakuan ulangan sebanyak: Kemudian dilakukan analisis untuk kadar air, abu gula reduksi serta uji organoleptik.
